Vegetable Beef Stew

The weather is getting cooler outside and that means it is time for soups and stews!  Nothing warms you up like a hearty soup when it is cold outside!

I got this recipe from Tom's mom and I love making it simply because it is easy.  There is nothing better than a delicious meal that doesn't take all day to make!  I made this Monday on my day off and actually doubled it so that we could have plenty of leftovers to take to work for lunch this week.



Vegetable Beef Stew

Ingredients:

1 pound stew beef, cubed
3 tablespoons flour
1 medium onion, diced
1 can (14 ounce) beef broth
2 cans (14. 5 ounce each) stewed tomatoes
2 cans (14.5 ounce each) potatoes, drained and cubed
1 can (14.5 ounce) green beans, drained
1 can (14.5 ounce) carrots, drained

Directions:

Combine meat and flour in plastic bag; toss to coat.  Brown meat in 2 tablespoons oil in frying pan.  Drain and transfer to 6 quart pot.  Add onion; cook until tender.  Season with salt and pepper, if desired.  Add tomatoes and broth.  Bring to boil; reduce heat.  Cover and simmer 45 minutes or until beef is tender.  Add vegetables; cook, uncovered, 5 minutes.  Serves 4.

**I added some red wine to the mix while it cooks for 45 minutes.  I just added another depth of flavor to the stew!**

This is such a simple meal to cook, but is so delicious!  We serve ours with cornbread muffins.



I got these adorable cupcake liners from TJ Maxx recently...they are just too cute!!  They had so many different designs for not a lot of money.  I just love that you never know what you are going to find at TJ Maxx...especially when this trip was to find bathroom accessories!
