Banana Pudding Pie Recipe

So, not only did Mattie and I make a banana pudding pie for Thanksgiving lunch, but we ended up having to make another THREE the day after!! There was none left over and I wanted to bring some back to my house for Tom to try and my mom and sister had another Thanksgiving meal to go to after I had to leave for work :-( and they wanted to take one there. We had so much fun making this yummy pie, but unfortunately did not take one picture of it! It was so good, it just did not last long enough to snap one!

Banana Pudding Pie
1 (12 oz) box Nilla Wafers
1/2 cup melted butter
2 large bananas, sliced
Vanilla Cream Filling
4 egg whites
1/2 cup sugar
1. Set aside 30 vanilla wafers; pulse remaining vanilla wafers in a food processor 8-10 times or until coarsely crushed. (Yield should be about 2 1/2 cups.) Stir together crushed vanilla wafers and butter until blended. Firmly pressed on bottom, up sides, and onto lip of a 9-inch pie plate.
2. Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Remove to a wire rack, and let cool for 30 minutes or until completely cool.
3. Arrange banana slices evenly over bottom of crust. Prepare Vanilla Cream Filling, and spread half of hot filling over bananas; top with 20 vanilla wafers. Spread remaining Vanilla Cream Filling over vanilla wafers. (Filling should be about 1/4 inch higher than top edge of crust.)
4. Beat egg whites at high speed with an electric mixer until foamy. Add sugar, 1 tbsp. at a time, beating until stiff peaks form and sugar dissolves. Spread meringue evenly over hot filling, sealing the edges.
5. Bake at 350 degrees for 10 to 12 minutes or until golden brown. Remove from oven, and let cool for 1 hour on a wire rack or until completely cool. Coarsely crush remaining 10 vanilla wafers, and sprinkle evenly over top of pie. Chill for 4 hours.
Vanilla Cream Filling
3/4 cup sugar
1/3 cup all-purpose flour
2 large eggs
4 egg yolks
2 cups milk
2 teaspoons vanilla extract
1. Whisk together first 5 ingredients in a heavy saucepan. Cook over medium-low heat, whisking constantly, 8 to 10 minutes or until it reaches the consistency/thickness of chilled pudding. (Mixture will just begin to bubble and will be thick enough to hold soft peaks when whisk is lifted.) Remove from heat, and stir in vanilla. Use immediately.
Mom, Mattie, and I found that it took forever to make the Vanilla Cream Filling, but then it will suddenly just get thick. Trust me though, it is worth the work!!

When I think about Thanksgiving, my first thoughts always go to the very memorable 10 Thanksgiving episodes that Friends did every year. I have to be honest, Thanksgiving is not one of my favorite holidays--I am not a fan of turkey or ham so I'm stuck with side dishes. Luckily, my family has caught on and make me delicious sides!
In honor of Thanksgiving and my favorite show, I'm going to post videos of my favorite Thanksgiving episodes. The first is from "The One With Football" where they have a *friendly* game of football! Sorry it's a little long, I couldn't find a shorter one! Enjoy!

Three Year Anniversary

Today is Tom and my three year anniversary! I cannot believe that three short years ago, Tom and I had just begun dating. Who would have thought at that time that three years later we would be engaged and planning our lives together?!
I am not sure if I told you the story of our "first" meeting, but I'll share it again. Honestly, it was not the first time that I had met him, but it was the first time that I actually sat down and talked with him for a long period of time...but before I do, I will share with you the first picture that I have of him and me. It was my first Halloween at college, and it is kind of painful to look at--I promise I do not dress like this anymore!

I am on the far right as Alice in Wonderland and Tom is on the far left as who knows what! I asked him what he was supposed to be the other day and he said "I don't know, I just wanted to wear a suit!" The funny thing was I showed this picture to my grandmother and she said that the guy on the end was really cute and that I should date him! Little did I know that only a few weeks later I actually would be dating him!!
A few days after Halloween, the girls in my suite and I decided to go over to Barney (Tom's dorm) to go to a party in his suite. We enjoyed ourselves thoroughly and I sat and talked with Tom for hours. Unfortunately, campus security heard of the party and came knocking on the door. I was convinced that I was in BIG trouble. As the security men lined us up in the hallway, I kept having to go to the bathroom to guzzle mouthwash so I would not smell like alcohol. While in the bathroom, I started talking to Tom again (who had the painful task of pouring all of the alcohol down the toilet). I apologized profusely about us getting busted and told him that it had to be my fault (why in the world I thought that, who knows!). I told Tom to Facebook message me (NERD--I know!) and let me know what was going on! The girls and I left the suite and went back to ours to contemplate what our fate would be!! Later that night, Tom messaged me and we started talking and that eventually led to us hanging out and then dating!!
I am so thankful that I decided to drag my behind out on that night...if I hadn't maybe Tom and I wouldn't be together now.
Baby, thank you for all the joys you have given me over the past three years. Three years ago, we didn't have an apartment, I didn't have a job, we didn't have our beautiful puppy Elli, and we weren't planning our wedding. I cannot believe all of the life changing events that have happened to us over the past three years, but I cannot wait to find out what the rest of our lives together hold! I love you!

Holiday Card Overload!!

As long as I have had a digital camera, I have been using various online services to print out my pictures. Shutterfly has always gone above and beyond with not only their prints but also their various gifts they offer. Many of my family members have been gifted calendars from Shutterfly and they are always highly praised. One time I waited too long to order one from Shutterfly and had to settle for using online services for a "big-box" store to get my calendar from...sad to say it did not have the same effect on the receiver as they had gotten a Shutterfly calendar the year before. I browsed the various offerings for their holiday cards because this year I am planning on sending out a card of the fiance, me, and our furbaby. I had seen on several blogger's pages that Shutterfly is giving away 50 free greeting cards, so definitely go check them out!!

Also, right when Tom and I got engaged, I immediately started looking at Shutterfly for our Save the Date cards. I love this one and probably will be ordering it pretty soon to send out to our guests (or course specified to us!)!! :-)

Like I said before I have purchased several wall calendars from Shutterfly but today I noticed they have new desk calendars. These are so cute! I have a feeling some family members *may* be receiving these for Christmas gifts!!!

Our Elli "Bee"

We have called our dog "Elli B" for as long as we have had her, since Belly rhymes with Elli and then we just shorted that to "B". Plus, I love anything with bees on it for some reason- I have a ring, necklaces, hair bobby pins, and limoge boxes all with bees on it.
So, tonight when Tom and I were walking around Target, we happened to be looking through the 75% off Halloween section, we found a bumblebee dog costume!!! We were a little worried because the biggest size they had was a large and Elli is a lab-mix, but a small lab-mix so we took a chance and bought her the costume.
Well, as you can see, momma got a little camera happy, but she is so stinkin' cute!!!

We will DEFINITELY be using this costume next year...I will have to think of what Tom and I can be to go along with it!!

P.S. Even though I posted this last night, it was late so I considered it to be my Thoughtless Thursday post! Have a great Thursday! (I have two tests, ick, so I may not have such a great day but tomorrow's Friday!!)

Top 2 Tuesday: Top 2 Favorite Gifts

Today's Top 2 Tuesday topic is our Top 2 Favorite Gifts! This one is really, really hard!
1. Jewelry
I have been lucky enough to receive several pieces of jewelry from my grandparents over the years that are family pieces. When I turned 16, my grandmother gave me a set of pearls that her father had given her for her sixteenth birthday. She has also given me a beautiful diamond and aquamarine ring that was her mother's, a multi-gem bracelet, and a silver bracelet. My other grandmother has given me several broaches that were her mother's as well as a beautiful silver bracelet. I enjoy getting family pieces instead of new because it is something that I can continue to pass down once I have children/grandchildren. Plus, on the same note: my beautiful engagement ring is my most prized possession. It represents the greatest gift I have ever received, my fiance Tom!

2. This is going to be silly, but I love getting television seasons on DVD! It is even better than watching them on DVR because you have the entire season right at your finger tips! Tom and I have an embarrassing amount of seasons, but in our defense we watch them instead of TV at night to fall asleep...
We have all ten seasons of Friends, The Closer, How I Met Your Mother, Reba, One Tree Hill, Charlie's Angels, Grey's Anatomy, I Love Lucy, Buffy the Vampire Slayer, and Royal Pains. I am also currently eyeing Glee, the newest released season of The Closer, and Rules of Engagement!

Also, last Christmas my mom got me the anniversary box set of Gone With the Wind, my favorite movie of all time. I haven't gotten Tom to sit down and watch it with me all the way through, but this was one of my favorite gifts that I have ever gotten because it was so meaningful!

Engagement Party

While some people were out Trick-or-Treating Saturday night, my family as well as Tom's parents were enjoying an Engagement party in honor of us! The party had a loose "fall" theme, not overwhelmingly Halloween themed. It was so much fun and so beautiful. My dad, his girlfriend, and my grandparents put such a great effort into the party and it was so much fun and we definitely felt celebrated and honored. Plus, it was the first time in our almost three years together that our families have met each other. Since Tom lives in Virginia, it is the first time that we have actually arranged for our families to meet in their visits down south and it went so well!
My uncle John acted as photographer for the night and he was kind enough to add them online to a photobucket account so I can "borrow" them to keep in my iPhoto library. Here are a few from the night:
