Here is the recipe, courtesy of Southern Living...
Banana Pudding Pie
1 (12 oz) box Nilla Wafers
1/2 cup melted butter
2 large bananas, sliced
Vanilla Cream Filling
4 egg whites
1/2 cup sugar
1. Set aside 30 vanilla wafers; pulse remaining vanilla wafers in a food processor 8-10 times or until coarsely crushed. (Yield should be about 2 1/2 cups.) Stir together crushed vanilla wafers and butter until blended. Firmly pressed on bottom, up sides, and onto lip of a 9-inch pie plate.
2. Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Remove to a wire rack, and let cool for 30 minutes or until completely cool.
3. Arrange banana slices evenly over bottom of crust. Prepare Vanilla Cream Filling, and spread half of hot filling over bananas; top with 20 vanilla wafers. Spread remaining Vanilla Cream Filling over vanilla wafers. (Filling should be about 1/4 inch higher than top edge of crust.)
4. Beat egg whites at high speed with an electric mixer until foamy. Add sugar, 1 tbsp. at a time, beating until stiff peaks form and sugar dissolves. Spread meringue evenly over hot filling, sealing the edges.
5. Bake at 350 degrees for 10 to 12 minutes or until golden brown. Remove from oven, and let cool for 1 hour on a wire rack or until completely cool. Coarsely crush remaining 10 vanilla wafers, and sprinkle evenly over top of pie. Chill for 4 hours.
Vanilla Cream Filling
3/4 cup sugar
1/3 cup all-purpose flour
2 large eggs
4 egg yolks
2 cups milk
2 teaspoons vanilla extract
1. Whisk together first 5 ingredients in a heavy saucepan. Cook over medium-low heat, whisking constantly, 8 to 10 minutes or until it reaches the consistency/thickness of chilled pudding. (Mixture will just begin to bubble and will be thick enough to hold soft peaks when whisk is lifted.) Remove from heat, and stir in vanilla. Use immediately.
Mom, Mattie, and I found that it took forever to make the Vanilla Cream Filling, but then it will suddenly just get thick. Trust me though, it is worth the work!!

While some people were out Trick-or-Treating Saturday night, my family as well as Tom's parents were enjoying an Engagement party in honor of us! The party had a loose "fall" theme, not overwhelmingly Halloween themed. It was so much fun and so beautiful. My dad, his girlfriend, and my grandparents put such a great effort into the party and it was so much fun and we definitely felt celebrated and honored. Plus, it was the first time in our almost three years together that our families have met each other. Since Tom lives in Virginia, it is the first time that we have actually arranged for our families to meet in their visits down south and it went so well!
My uncle John acted as photographer for the night and he was kind enough to add them online to a photobucket account so I can "borrow" them to keep in my iPhoto library. Here are a few from the night:

My senior year of high school, my school choir went on our annual spring trip. This year I was extra excited...instead of going to Disney or Williamsburg, we were going on a week-long trip to England, Ireland, and Wales! I was beyond excited! After some begging and pleading, my mom agreed to let me go and my grandparents graciously agreed to fund the trip as my graduation present. What I didn't know was that one week in three COUNTRIES is not enough time to see anything! I only got a little taste of what they had to offer, but I was instantly hooked.
I loved London! We only got a few hours in London to explore after we visited the British Museum (which was remarkable!). My funny story about the trip: I wanted to buy a Burberry purse from the Burberry flagship store in London. I had saved up my money so that I could afford such a luxury and then headed straight to the store, forgoing going into Harrods. I picked out the bag I wanted and headed to the register. (Backstory: The night before, when we had arrived, I had trouble using my debit and credit card but had made an expensive collect call home--$60!!--and hoped that my mom had taken care of the problem) Well...an hour later Burberry took care of the problem for me! Apparently, we had not taken the proper precautions of letting the bank and credit card company know that I was traveling out of the country and to allow transactions to occur. The employs at the store were beyond understanding and extremely kind to call the company and work things out for me! I had no idea what to do, I was 17 in a foreign country with no parents with me!!
The entire trip was beyond what I had expected. I loved all the sights, smells, tastes of the amazing countries I visited. Unfortunately, we saw most of the places by bus and that was just not fair! They could have dropped me off and I would have wandered around the cities enjoying everything I could see!

First off, thank you guys for the sweet comments about our engagement pictures! I have been fighting my internet connection trying to get them uploaded to Shutterfly so I can print them off and see how they look in print before we decide which one to run for our announcement in the newspaper (yes I know, you live in a small Southern town when...).
Truth be told though, this week has kicked my booty. We are on the verge of our fall break (thank goodness!) but that also means that in all of my classes this week there has either been a midterm (yuck!) or a paper due (double yuck!). Along with all the wonderful goodness of school this week, my horrible immune system has decided to take an early fall vacation and has left me feeling cruddy!
Right now, Tom is in the other room enjoying my BFF (Stevie the TV, Friends reference) while I'm stuck in the bedroom ATTEMPTING to write my final paper before it is Fall Break! However, this paper is for my science class and since I am a history major science is not.so.much my cup of tea. I have read five articles about this person I am supposed to be writing about and do not comprehend a darned thing that I have read. Could it be the cold medicine acting up? Probably, but I blame it on my non-science head playing tricks on me!
I can see the light at the end of a long, long tunnel but am fighting it for some reason...I am the world's number one procrastinator. Tomorrow after I turned this stinking paper in to my mean professor (not really mean, he just seems like a monster to me right now!), Tom and I are headed up to his parents' house for a long weekend of relaxation! I am looking so forward to it! I think his parents think he is marrying a narcoleptic because all I ever do up there is sleep- I mean I wake up from a nap, move downstairs, start watching Tom and his brother play video games and I fall asleep on the floor, and then it is time for bed...the best part is Elli has a buddy to play with up there! Tom's childhood dog Simba resides at his parents' home and they are best friends...we mention his name to her and she gets very tail-thumping excited!
